Cheeseburger Stuffed Peppers 🍔🫑💫 This is what I make when I only have 15 minutes to prep dinner! Ingredients: 4 large bell peppers, halved and seeds removed 1 lb ground beef ½ small yellow onion, finely diced 2 cloves garlic, minced ⅓ cup ketchup 1 tbsp yellow mustard 2 tbsp mayo 1 tbsp Worcestershire sauce 1 tsp salt ½ tsp black pepper ¾ cup finely diced pickles (plus extra for topping) 1 ½ cups shredded cheddar cheese, divided 1 ½ cups cooked rice Instructions: Preheat oven to 375°F. Place pepper halves cut-side up in a baking dish, add a splash of water to the bottom (keeps things from drying out), cover loosely with foil, and bake for 10–15 minutes. We’re softening, not fully cooking. In a large skillet over medium heat, cook the ground beef and onion together until browned and the onion is soft, about 5–6 minutes. Add garlic and cook 30 seconds (just until it smells like you know what you’re doing). Drain excess grease if needed. Stir in ketchup, mustard, mayo, Worcestershire, salt, and pepper. Let it simmer 2–3 minutes so everything gets cozy. Turn off heat and stir in diced pickles and 1 cup of the cheddar. If using rice, mix it in here. It should be thick, kinda creamy, and very hard not to eat straight from the pan. Spoon the filling evenly into the pre-baked peppers. Top with remaining ½ cup cheese. Return to oven (uncovered) and bake 10–15 minutes until cheese is melted and everything is hot through.
