@meggrowsplants: Zucchini pumpkin oat chocolate cookies! 🍪 2 year old approved ✔️ I love a rustic cookie that you can just kinda throw together and not worry about how it looks- but it still tastes great! ½ cup canned pumpkin puree ½ cup shredded zucchini 1 large egg 1½ cups old-fashioned oats 2 cups all-purpose flour 1 tsp baking soda ½ cup packed brown sugar ½ cup granulated sugar 1 tsp ground cinnamon 1 cup unsalted butter, softened 12 oz chocolate chips or mini morsels 1 tsp vanilla extract Preheat oven to 350°F. In one bowl, whisk together the flour, oats, baking soda, and cinnamon. In a separate bowl, cream the softened butter with both sugars until light and fluffy, then mix in the egg, vanilla extract, pumpkin purée, and shredded zucchini (squeeze out excess moisture first). I did not do the step like this because I had an impatient toddler waiting on me so I just threw them all together 😂 Add the dry ingredients to the wet and mix until just combined, then fold in the chocolate chips. Scoop the dough onto a lined baking sheet and bake for about 14 minutes, or until the edges are set and the tops are lightly golden.
