It’s been a while ~ let’s make some Matcha Choux au Craquelin! Matcha Pastry Cream 🥛 225g whole milk 🍦 5g vanilla bean paste 🍬 55g granulated sugar 🌽 15g cornstarch, sifted 🍃 6g matcha, sifted 🐣 35g egg yolks, room temp 🧈 15g unsalted butter, cold cubed 1. Bring milk and vanilla to a light boil over medium heat. Take it off the heat and set aside. 2. Whisk together sugar, cornstarch, and matcha in a bowl, then add in the egg yolks. Mix until smooth. 3. Slowly pour in the hot milk mixture over the egg yolk mixture while whisking, then pour everything back to the saucepan. 4. Mix continuously over medium heat until thick. Once it starts to bubble, remove from the heat after 1 minute. 5. Mix in the cold cubed butter until smooth, then pass it through a sieve. 6. Cover the surface with plastic and place in the fridge. 7. Mix it until smooth before using, and transfer it to a piping bag. Matcha Craquelin 🧈 55g unsalted butter, cold cubed 🍬 50g light brown sugar 🌾 30g plain flour, sifted 🥜 20g almond flour (or plain flour) 🍃 5g Matcha, sifted 1. Blend everything together in a food processor. 2. Roll between two sheets of parchment paper until you reach 18cm X 24cm. 3. Place it in the freezer for 15 minutes. 4. Cut twelve 5-6cm discs then place it back in the freezer for 10 minutes. 5. Remove the excess dough and make more discs until you run out. 6. Freeze until ready to use. Preheat the oven to 200C and line a baking tray with parchment paper. 2. Whisk together matcha and flour in a small bowl, then set it aside. 3. Bring butter, water, milk, salt, and sugar to a light boil in a saucepan then take it off the heat. 4. Dump in the flour mixture and mix. Place it back in the heat for about a minute while continuously mixing. 5. Transfer it in a bowl of a stand mixer with a paddle attachment. Let it cool slightly on low speed (~3 minute). 6. Increase the speed to medium then slowly incorporate beaten eggs until smooth. Do not overmix. 7. Transfer the mixture to a piping bag with a round tip and pipe 5cm circles to the lined tray. 8. Add the frozen matcha craquelin on top and bake it for 40 minutes (15 minutes at 200C then 25 minutes at 170C). 9. Turn off the oven, open the door slightly, and leave it there for 10 more minutes.
