@etherealspoon: Do you know how to eat a Buddha’s hand? In this post I’ll outline my method on candying this aromatic citron. 1 - Wash your Buddha’s hand to remove dirt and debris. 2 - Cut the fruit into cubes/pieces keeping them relatively the same size. 3 - Place the pieces in a shallow pan so that they are on a single layer. 4 - Cover these with water and simmer them till the white parts turn transparent. About 45min to an hour. This draws out the bitterness from the fruit. 5 - Drain off the water and add 400g sugar and 300ml water. 6 - Return this to the heat and stir until the sugar dissolves. 7 - Then simply allow this to simmer until the fruit has been thoroughly saturated with syrup. 8 - It should look like this. Put this in a jar covered with its syrup and place it in the fridge where it will stay good for a long time. Candied citron is used in a lot of European fruit cakes.
