Creamy Dump & Bake Fish Curry A proper chuck it all in and bake dinner :) Ingredients: 500ml thickened cream, or coconut cream 5 frozen hoki fillets 2 tsp minced garlic 1 tsp minced ginger, or ½ tsp ground ginger 1 tsp chilli, or more if you like it spicy 1 tsp curry powder, or up to 1 tbsp for a stronger curry flavour ½ tsp paprika ½ tsp Vegeta Salt and pepper, to taste 2 tbsp tomato paste, if you aren't using fresh tomatoes 4 fresh tomatoes, chopped 2 zucchinis, chopped ¼ cup white wine Rice, to serve No wine? Use vegetable stock instead. Method: Preheat the oven to 180°C fan-forced. Add the cream or coconut cream, garlic, ginger, chilli, curry powder, paprika, Vegeta, salt and pepper to a large ovenproof baking dish. Add the tomato paste if you're not using fresh tomatoes. Give everything a really good whisk until you've got a creamy curry sauce. Add the frozen hoki fillets and nestle them into the sauce, turning them a little so they're coated and partly submerged. Scatter the chopped tomatoes and zucchini over the top. Pour over the white wine, then spoon a little of the sauce from the bottom of the dish over the fish. Cover the dish tightly and bake for 45 minutes to 1 hour, or until the fish is cooked through and flakes easily. Remove the foil for the last few minutes if you want the veggies to get a little colour. Serve with rice and whatever extra veggies you like. PLEASE note: This is very much a chuck it in and see what happens kind of dinner. Use thickened cream for a rich, creamy curry or coconut cream if you prefer that coconut flavour. Add more curry powder if you want it punchier, and more chilli if you like heat. #dumpandbake #easydinner #dumpandgodinner #EasyRecipe #fishcurry
