There are two mods I use for this. One that gives me a notification when there is going to be a cutscene and another that makes it so I will see all cut scenes in camp available to me no mater what.

I do one long rest with food, then, repeatedly do rest with no food just to trigger my scenes

my advice is spam long rests with no camp supplies. it'll end all of your until long rest abilities and you won't get the benefits of a rest, but once you've gotten all the scenes you can then take a real long rest

You don’t need to do a full rest for a cutscene, don’t use any food and it’s a partial rest

you don't actually have to use camp supplies to do a long rest. they just heal you and refresh your spell slots. I usually just spam empty long rests until cut scenes are done
