Making a simple switch in one of my favourite Ramen dishes to keep things exciting and save some money while I’m doing it. Swapping out chicken breast for pork meatballs saves me £2 in this dish alone and tastes amazing too! @Love Pork #Ramen #Pork #Meatballs  Ingredients Ginger paste 3x table spoon Chilli paste 3x table spoon Garlic paste 3x table spoon  Hot honey 2x table spoon   Soy sauce 2x tea spoon  Fish sauce 1x tea spoon  Fresh lemon grass x2 (bruised and removed before serving)   Beef stock 1.2L (low salt beef stock cubes - boiling water)   Glass noodles 1x pack 300g Pork mince 500g Vegetable oil half tablespoon  Eggs x4 Lime (cut into quarters) x1 Red chilli chopped x1 Fresh coriander 1x bunch Spring onion roughly chopped  x4 Bean sprouts 150g Method  1. To a mixing bowl add the pork mince, 1 tablespoon of ginger, chilli and garlic paste and a small handful of finely chopped coriander. Mix well with hands until fully combined. Form the mixture into 16 equally sized balls.  2. Heat the oil in a large frying pan at a medium heat, add the meatballs and brown them all over 8-10 minutes. Remove from the heat and set aside for later.  3. To a large heavyweight saucepan add the remaining ginger, garlic and chilli paste, hot honey, soy and fish sauce. Bring up the heat and stir until the mixture begins to bubble and the aromatics become fragrant 2-4 minutes.  4. Add the lemongrass and beef stock, bring to the boil, then reduce the heat and simmer for 5 minutes. Add the meatballs and any resting juices and cook for a further 10 minutes or until the meatballs are fully cooked through.  5. Meanwhile cook glass noodles following pack instructions. Soft boil the eggs, remove shells and cut in half. Drain the noodles well and divide between 4 bowls. Top with the meatballs and broth (removing the lemongrass) 6. To finish the dishes add in the soft boiled eggs and scatter over the spring onion, red chilli and bean sprouts. Season to taste, serve with a lime wedge for squeezing over.
