@twintotable: Day 45 of 100 days of cozy: Roasted Boursin Tomato Soup. Recipe: 3 1/2 pounds ripe tomatoes (I used cherry and beefsteak) EVO, (drizzle over veggies) Balsamic vinegar (about 2 tsp drizzled on veggies) 1 red bell pepper, cut into large chunks fine sea salt and freshly-cracked black pepper 1 yellow onion, quarters 1 head of garlic, top cut off 1 sprig of rosemary 1 sprig of thyme 1 pkg of Boursin cheese S&P 1/4 teaspoon crushed red pepper flakes 2 1/2 -3 cups vegetable broth 2 to 3 T of tomato paste Preheat oven to 400 degrees. Cut all veggies and arrange on parchment lined baking sheet with Boursin cheese placed in the center. Drizzle with EVO, balsamic, and s&p. Roast for about 40 minutes until veggies are softened. Remove from oven. Let cool and squeeze the garlic out of the garlic head, remove stems of tomatoes and transfer all veggies to blender with tomato paste, red pepper flakes and vegetable broth and tomato paste. Blend until smooth, add more vegetable broth for desired consistency. Transfer to Dutch oven and heat before or until serving. Drizzle with balsamic glaze for serving or parm cheese if preferred.
