@eatinginberlin: I've seen and heard so much about Tie Guo Dun, but I finally went to an Iron Pot Stew restaurant this time visiting Beijing. It's such a delicious and mild way to infuse flavor into all ingredients by stewing everything in this gigantic thick heavy iron pot. The preparation happens on the table and I loved watching the lady slapping the corn mass onto the iron pot walls. Everything is then cooked with a wooden lid on for about 20min and it was ready to eat. This is a very specific dish from the Dongbei region of China and you can cook it with a wide range of ingredients. We chose fish this time, but chicken is also another crowd favorite. The broth thickens towards the end of the cooking and the breads are a perfect sponge to absorb all the umami sauce that's left. #tieguodun #ironpotstew #dongbei
