I just realized I was making my starter week because I was feeding it at random times or feeding it before It had peaked… Is that true? So is the best thing let it come to Peak and use what I need to make bread and then set aside some and feed it to leave on the counter?? I think I was totally diluting it by feeding it a random times.

I fed my starter at 12:30. It’s doubled, but i know it can keep growing and it’s already 5pm. I changed my mind in baking today so I put it in refrigerator to pause it. I’ll take it out tomorrow. Do I need to feed again?

Wait …. So you separate a little bit out to feed it….. so do you just constantly have multiple jars of sourdough? Or do you combine it again after? What do you do with the first jar you took sourdough out of? Or…. What I’m so confused about this haha
