@thecontrarianmoney: Green Bean Casserole 🥘 Let’s be honest… green bean casserole is nobody’s favorite Thanksgiving side dish, but this version changes that. Fresh green beans, homemade mushroom soup and crispy onions, and the perfect sweet finish. Ingredients Casserole • 1.5 lbs fresh green beans (trimmed, cut in halves or thirds) • Homemade cream of mushroom soup (recipe below - skip the canned stuff) • ½ cup milk • 1 tsp soy sauce • ½ tsp black pepper • ½ tsp seasoned salt (I use Lawry’s) • 1 cup shredded cheddar • 2.5 cups homemade crispy fried onions (see recipe below) • ¼ cup sliced almonds, for topping • ¼ cup pomegranate seeds, for topping Cream of Mushroom Soup • 8 oz mushrooms, white or baby bella • ¾ cup chicken broth • ¼ cup diced onion • ¼ tsp thyme • 3 Tbsp butter • ¼ tsp salt • ¼ tsp pepper • ½ cup half & half • 1½ Tbsp apple cider vinegar Crispy Onions • 2 yellow onions (thin rings) • 3 cups buttermilk • 3 cups flour • 1 tsp salt • 1 tsp pepper • 1 tsp garlic powder • Neutral oil Instructions Cream of Mushroom Soup 1. Simmer mushrooms, broth, onion, thyme until tender. 2. Blend in a blender until mostly smooth, some chunks ok 3. Melt butter in same pot, whisk in flour. 4. Add salt, pepper, half & half, and mushroom blend. 5. Boil until thick, stirring constantly. 5. Stir in apple cider vinegar Crispy Onions 1. Soak onions in buttermilk for 20 min. 2. Mix flour + spices, coat onions. 3. Fry 5 min until golden. Casserole Assembly 1. Preheat oven to 350°F. 2. Boil green beans for 3 min in salted water, ice bath immediately. 3. Mix beans, mushroom soup, milk, soy sauce, pepper, seasoned salt, cheddar cheese, and 1.5 cups crispy onions. 4. Bake 30 min. 5. Top with remaining crispy onions + almonds, bake 10 more min. 6. Finish with pomegranate seeds.
