instead of water, use a slightly wisked egg white, mix it throughout the nuts, then add cinnamon sugar & mix again, cook as this instructed or lay out on a decent parchment paper lined cookie sheet in a 180c 360f ish oven for 20mins, stir and do another 10 to 20mins more time til crisp and golden. I make c&s almonds & cashews every winter for many yrs. Found water doesn't crisp them nor does the c&s stick as well as using the egg white
