I've worked in restaurants for 25 years, in 8 states and two countries. from diners and food trucks, to 4 star James beard nominated restaurants and NOT A SINGLE ONE keeps a second fryer for gluten free. not a single one.

This is an interesting take. Typically a bar or restaurant that advertises that they have gluten free options do it because they spent the money for a second fryer that gluten isnt allowed in.

they can be gluten free. they probably cook the stuff in two different fryers. I mean you ever work in the kitchen before you have more than one fryer. one fryer can be dedicated to gluten-free stuff

If you do a parts per million to mg of gluten calculation of how much gluten is absorbed by the oil in shared friers, it usually comes out to around 0.8mg per serving. It takes 10mg daily for the most sensitive celiac to experience GI damage. People get psychosomatic about it often

Yeah most places SHOULD have a gluten free fryer, just like they do for sea food. 100% because it’s a food saftey/allergen issue.

I’m sorry if you have a specialized diet. Restaurants aren’t obligated to cater to you. People in here talking about GF fryers. Should every restaurant have a GF fryer, a halal fryer, a vegan fryer, a seafood fryer and everything in between?

Not all but many places have different friers for different purposes. Fish in one. Breaded in one. One just for fries. Stuff like that. It's pretty common for a restaurant to have a fryer that's not being used for items with glutton that they can fry yours in if you ask.
