the change in pressure from flying created a space of negative pressure within the water bottle. when you open the bottle, air from around you enters as the pressure between the bottle and the surroundings is equalized. It's the opposite of letting air out of a balloon. When the bottle is sealed, it still wants to match the pressure of its surroundings. so anything that can "escape" to gas phase will try to. In this case, the aromatic compounds of the tea more readily transitioned to gas phase to help equalize the pressure. One word of caution, this explanation uses common language to explain this situation, if we want to get really technical about the chemistry that is happening here it would take me a lot more time lol

Altitude/air pressure is also the reason water bottles with straws explode when you open them on a plane lol look it up it’s hilarious 😂

I'm not a scientist but did the plane land at a higher elevation than you took off from? like maybe you sealed the bottle near sea level and now you're more inland and higher up
