Go by weight that mean use for example 200g onions and 100g carrots and celery. In Brasil, most people use onions and garlic for every (salted) dish. And we also use a lot of “cheiro verde” to finish the dish, it’s a mix parsley and scallion, but some places use more Coentro (coriander). But Brasil is a really big place, and I’m from SP, so maybe some other states have some variations that I’m not aware of!

I found out that the celery is why I didn't like my moms soups and sauces. I often use alternative cubes with onion and garlic flavour and I sometimes add ginger so... the 'indian' way it is then🤭
