Lunch 🍗 Classic Chicken Adobo Rice Bowl Ingredients: 1 lb bone-in chicken thighs • 1/3 cup soy sauce • 1/3 cup cane/white vinegar • 6 garlic cloves (smashed) • 2 bay leaves • 1 tsp whole black peppercorns • 2 cups cooked jasmine rice • 2 scallions (sliced) Instructions: Combine soy, vinegar, garlic, bay, and peppercorns; add chicken and marinate 15 min. Transfer all to a pan; simmer covered 15–18 min, flip, then uncover and reduce until glossy and the sauce coats chicken. Serve over rice; top with scallions. Dinner 🍤 Pancit Bihon with Shrimp & Veggies Ingredients: 6 oz bihon (rice stick) noodles • 8–10 shrimp (peeled) • 2 cups shredded green cabbage • 1 medium carrot (matchsticks) • 1/2 onion (sliced) • 2 garlic cloves (minced) • 3 tbsp soy sauce • 1 tbsp neutral oil • lemon or calamansi wedges Instructions: Soak bihon in warm water 10 min; drain. Stir-fry onion and garlic in oil 1 min; add shrimp and cook just pink. Add cabbage and carrot; toss 2–3 min. Add noodles and soy; toss until coated and tender. Finish with lemon/calamansi.
