@marcusolaoire: Bistro food forever and ever! I saw @chefadambyatt make his ultimate Coq au Vin and it brought me back to the closest I've ever come to opening my own restaurant, and cooking my first Coq au Riesling in 2021. Alsace has some real regional bangers that sit in between French and German cuisine, and this Coq au Riesling is up there with the tastiest things you can put in your mouth. I feel like 2021 would’ve been an insanely difficult time to navigate opening anything tbh. I hope you get the chance to do it again, on your terms, and it’s absolutely right for you.

Look lovely! Just a thought with this, you spent the time browning the chicken skin but it then goes soggy again in the sauce when you add it back in, seems a bit of a shame. Could you take the skin off and serve as chicken crackling for texture?
