Brown Butter Apple Cider Coffee Cake 🍎☕️ Ingredients:  Streusel - 1 cup all-purpose flour  - 1 cup brown sugar  - 1 tsp cinnamon  - pinch of salt - 1/2 cup unsalted butter melted  Coffee cake  - 1/2 cup unsalted butter  - 1/2 cup brown sugar  - 1 cup apple cider  - 1/2 cup apple sauce  - 2 eggs  - 1/2 cup Greek yogurt  - 1 tbsp vanilla extract  - 2 cups all-purpose flour  - 1 tsp cinnamon  - 1/2 tsp allspice  - 1/2 tsp nutmeg  - 1/4 tsp ginger  - 1/2 tsp salt  - 1 tsp baking soda  - 1 tsp baking powder Glaze - 1 cup confectioners’ sugar  - 2 tbsp milk Instructions: - Start by reducing the cider. Add apple cider to a large pot and bring to a boil. Once it’s boiling, reduce the heat to low heat and allow to simmer for 25-30 minutes, stirring occasionally. Once the cider has reduced, you will be left with 1/2 cup of cider. Set aside to cool. - Preheat your oven to 375°F. - Place butter in a small saucepan over medium-high heat. Stir for 5-7 minutes until you have a foamy, golden, nutty butter. Transfer to a small bowl and set aside to cool while you work on your streusel. - In a small bowl, combine brown sugar, flour, cinnamon, salt, and butter. Mix until you have coarse crumbs and set aside. - In a large bowl, whisk together brown butter, brown sugar, reduced apple cider, eggs, Greek yogurt, apple sauce, and vanilla. Mix until everything is well combined.  - To the wet mixture, add flour, cinnamon, allspice, nutmeg, ginger, salt, baking soda, and baking powder. Mix until everything is combined and smooth. - Grease an 8 x 8 pan and line with parchment paper, this will help the parchment paper lay flat and it will allow the cake to lift out of the pan with ease once it’s done baking.  - Add half of your batter to the pan, then add a layer of streusel before adding the remaining batter. Top off the cake with another layer of streusel and bake for 45-60 minutes. - While the coffee cake bakes, work on the glaze. In a small bowl, whisk together confectioners’ sugar and heavy cream.
