Mihawk isnt a swordsman, him saying "This is the smallest knife I have" insinuates he has other knives, he was near the baratie when we first saw him, he stole the biggest knife from the kitchen, painted it black and bedazzled it. Zoro says he's the strongest swordsman but here me out, Zoro doesnt know what a sword looks like, his first experience with the sword was with Kuina, Kuina's dad didnt believe women could use the sword so why would he give his daughter one, he gave his daughter a knife cause he wanted her in the kitchen, Zoro just thinks all knives are swords and thats what he saw when he was younger, so when Zoro saw Mihawk's big knife Yoru he just believed Mihawk was a Swordsman, Mihawk and Zoro are knifemen. It also explains why Sanjii and Zoro are always on par, he cant surpass a cook while using a knife, the cooks main weapon.
