It is the same for “Italian” food in America. Early immigrants didn’t have access to the ingredients that were available in Italy so they improvised. Also, the food in Italy varies by region and season. There isn’t a national cuisine.

China is fascinating. I wish I could go. My nephew spent 3 months there for college. He speaks Mandarin. He is saving up to go back. He is a young black MAN. NEVER felt threatened. Curiosity but not raw hatred we feel in the USA

You should try Indian-Chinese food. It has a similar story of survival, adaptation and thriving. It is wildly popular in India. I don’t know where you live but I’d be happy to recommend a restaurant. It isn’t easy to find them in China but they do exist.
