It does have a proofer but it gets to like 100°, so be careful.

I hate to burst your bubble, but that proof setting is for non-sourdough bread. It’ll get way too hot. Get an oven thermometer to check. I proof mine at 80 degrees, but only let it rise 30%. It’ll finish proofing in the fridge overnight bc it takes hours to cool down. You can still use your oven, just put a mug of boiling water on the bottom of the oven.

I have a proofing box with heated pad inside. Got it off of amazon,was from a sourdough company and fairly inexpensive compared to others i've seen.

That’s so awesome!! For people that don’t have that option on their oven built in, I’ve found a heating pad or laying whatever you’re proofing on the counter above your dishwasher (that’s running/ran recently).

I have a Samsung that has that but it gets to 100 degrees meant for yeasted bread. I can’t turn mine down. I bought an oven thermometer so I can keep up with how warm it is. I will turn it on then after awhile turn it off and crack door. Works great for me

I use it all the time on my kitchen aid oven. It’s sooo wonderful, as my house is also cooler! Use it!

Did you cut into it before allowing it to cool for a few hours because cutting into a loaf before that will give a gummy texture due to the starches in the hot loaf not being allowed to set when cut so the the steam inside eacapes. Also, a proofing mat is amazing to use and has a thermometer that temps the dough so you set it to whatever temp you want your dough to be and it adjusts the heat of the mat to the doughs temp.

my bread proofing option on my oven got too hot. you want it around 75-80 degrees.
