@thefitnesschef_: Find out how my attempt at this marry me chicken orzo turned out 👀 Ingredients (serves 4): 600g chicken breast, cut into small pieces 5ml olive oil 5 cloves of finely chopped garlic 8 chopped sun-dried tomatoes 2 tbsp oregano 2 tbsp smoked paprika Salt & pepper to taste 200g orzo 500ml chicken stock 1 can of coconut milk 2 handfuls of spinach 70g finely grated Parmesan Method: 1. Preheat pan, then add the olive oil, chicken breast, garlic and sun-dried tomatoes. Cook for 5 mins. 2. Add the seasoning, orzo and chicken stock, stir well, place lid on and leave for 5-8 mins until orzo is tender. 3. Add the coconut milk, stir well before adding the spinach and Parmesan. I made this tonight. I had to modify it since I didn’t have dried tomatoes or coconut milk. Instead I used about 1/4C tomato paste, about 1/3 block of cream cheese with about 1/2C heavy whipping cream. Also used small pasta instead of orzo. It was fabulous. We went back for seconds. Great recipe. 🥰💜

Watched this last night, made it tonight! Really good! Veganised it with a combination of Plant Chef chicken pieces and Tofoo tofu then vegetable boullion. Used half the oregano and smoked paprika as well - sorry 🙈 Was still delicious! Very glad I stumbled on the reel 😀
