Hey! I love Korean cuisine, and I’ve been making Korean Army Base Stew for my family since I had it in a restaurant in Seoul in 2017. I took a few Korean cooking classes in Seoul as well (4Seasons Cooking) and just fell in love. As someone outside the culture, I want to share it with respect and care. I credit the cuisine and call heavily adapted versions “inspired” or “inauthentic” rather than authentic, as that seems to be the more respectful thing to do. My goal is appreciation, not ownership, and any changes are not meant to erase any traditions.. the adaptations just come from what I have in my fridge or pantry or what kind of time I have that day. This dish actually has a very difficult history: it originated in the years following the Korean War, when food was scarce and many people were starving. Locals created it using leftover U.S. military rations like spam, hot dogs, and canned beans. It’s a dish born of survival, reflecting hunger, displacement, and the impact of foreign military presence. I encourage you to seek Korean cooks for authentic recipes and read about the history of this dish to better understand its origins and significance.

The hole point of this meal is that it was a struggle meal because the Americans weren’t allowing access to proper food and they had nothing else to cook with. Just remember that when you’re making these fancy dishes where they came from in their history.
