Recipe below ⬇️ We like to call these our Shabu Rice Bowls because they’re inspired by some of our favorite foods & flavors from shabu shabu. Definitely not “traditional,” but SO delicious! Shabu-Style Beef & Veggie Rice Bowls ~4 servings Ingredients: 2 cups cooked rice 1 lb thinly sliced shabu beef 4–6 cups mixed veggies (I love baby bok choy, Napa cabbage, carrots & brown beech mushrooms) Shabu-Inspired Sauce: Generous drizzle of soy sauce Splash of rice vinegar Drizzle of sesame oil Chili crunch, to taste Green onions, sliced Optional: fresh garlic + ginger Instructions: Cook rice according to package instructions. Chop veggies and steam until tender-crisp. Heat a pan over high heat and quickly sear the shabu beef—a few seconds per side is usually all it needs, so don’t overcook! Mix the sauce ingredients together, adjusting everything to taste. Assemble your bowls with rice, beef, and veggies, then drizzle the sauce over everything and toss together. Notes: Use whatever veggies you love—this meal is super customizable! I get my shabu beef from Costco. It comes in a giant pack, so I separate and freeze it in smaller portions for quick meals. Rice noodles are also delicious instead of rice. You can swap the beef for tofu! Asian-Inspired Cucumber Salad 🥒 Ingredients: 1 English cucumber, very thinly sliced (a mandoline makes a HUGE difference!) Sprinkle of salt A couple generous drizzles of rice vinegar ~1 tsp soy sauce Generous drizzle of sesame oil 2 tsp chili garlic sauce, plus more to taste ~1 tsp maple syrup Sesame seeds, optional Instructions: Thinly slice the cucumber and add everything to a bowl. Toss really well, taste, and adjust the vinegar, soy sauce, sesame oil, chili garlic sauce, or maple syrup until it tastes perfect to you.
