@lovely.greens: One of the most beautiful harvests of the year comes after the first frost. It’s then that you can dig up colorful and delicious New Zealand yams, also known as oca. I’ve grown this unusual vegetable for over a decade, and they’re a real treat! They’re a flavor unto themselves but a little reminiscent of lemony potatoes. They’re much more tender, though. Growing them is easy in my climate (British Isles, zone 8b/9a), and if you give them light soil with plenty of organic matter, you can get some bumper harvests. The key to growing them is having 8-10 weeks of frost-free weather after the autumn equinox. The tubers only begin forming after the equinox and need those weeks to plump up. This year, cold weather came early and nipped the growth cycle in the bud. I still harvested a decent amount to enjoy over several meals, though.
