Beef, not pork, is blowing my mind! Fancy places will pair the tofu w/ pork belly, which sounds a lot better than it is. The ground pork version is magnificent. Much to the chagrin of vegetarians, combining pork & tofu is the boobs! It’s so good. 💕🔥

All mapo tofu is made with a crazy amount of oil. Restaurant mapo uses maybe twice as much as you did here.

i tried to make it today but i used too much pork and not enough tofu and it really did end up tasting like an extremely meaty bolognese with undertones of ginger and sichuan pepper
