Ingredients: - 1 whole chicken (about 4 lbs) - 2 tbsp olive oil - 4 cloves garlic, minced - 1 tsp salt - 1/2 tsp black pepper - 1 tsp dried thyme - 1 tsp dried rosemary - 1 tsp dried parsley - 4 large potatoes, cut into chunks - 2 tbsp olive oil (for potatoes) - 1 tsp salt (for potatoes) - 1/2 tsp black pepper (for potatoes) - 1 tsp dried thyme (for potatoes) - Assorted seasonal vegetables (carrots, zucchini, bell peppers, etc.), cut into chunks - 2 tbsp olive oil (for vegetables) - 1 tsp salt (for vegetables) - 1/2 tsp black pepper (for vegetables) - 1 tsp dried herbs (thyme, rosemary, or oregano) Instructions: 1. Preheat oven to 375°F (190°C). 2. Rub the whole chicken with 2 tbsp olive oil, minced garlic, salt, pepper, thyme, rosemary, and parsley. Place in a roasting pan. 3. In a large bowl, toss potatoes with 2 tbsp olive oil, salt, pepper, and thyme. Arrange around the chicken in the pan. 4. Roast in the oven for about 1.5 to 2 hours, or until the chicken reaches an internal temperature of 165°F (75°C) and vegetables are tender. 6. Baste the chicken occasionally with pan juices during roasting. 7. Remove from oven, let rest for 10 minutes before carving.
