Mine did the same thing, I just put in into my stand mixer and let it firm back up and let it sit overnight and it finally set up.

The reason it was probably watery is because you used cook and serve pudding and not instant pudding and pie filling. There is a big difference. That happened to me once that’s how I figured it out!
