I usually say "parallel parking" and everytime it's made them laugh, then go on to give my real answer. I like to do it to show I actually have a personality and it leaves a lasting memory on the interviewer.

I sometimes rush too much. When I realize I’m doing it, I deliberately make an effort to slow down by splitting the task in smaller chunks each of which I treat as complete tasks which have to get done right. I’m a modular airline pilot in training and I’ve done this for my PPL and now through my ATPL studies. Helps A LOT.
