Jorda Recipe (Serves 4-5 )
Ingredients:
For the rice:
• Polao/Basmati rice — 1 cup
• Food color (orange) — a pinch
• Water — enough to boil
For the sugar syrup:
• Sugar — 1 cup
• Orange juice — 1 orange
• Orange cubes — a few (optional)
For the mix-ins:
• Ghee — 2–3 tbsp
• Mawa — ¼ cup
• Morobba — 2–3 tbsp
• Raisins (kismish) — 2 tbsp
• Almonds (badam) — 2 tbsp (sliced)
(Fry raisins + almonds lightly in ghee before using)

Cooking Method:
1. Boil the rice:
Wash and cook rice with a pinch of orange food color until 80% done.
Strain and rinse with cold water. Set aside.
2. Prepare sugar mixture:
In a pan add 1 cup sugar, orange juice, and orange cubes.
Cook until sugar melts completely.
3. Add rice:
Add the boiled rice to the syrup and gently mix so the grains don’t break.
4. Add mix-ins:
Add fried kismish, badam, mawa, morobba.
Pour 1–2 tbsp ghee and mix everything well.
5. Dom:
Cover with a tight lid and cook on low heat for 30 minutes.
6. Serve warm — soft, sweet, fragrant jorda!
