Menariknya, meskipun Arabika umumnya tumbuh stabil di 1200 sampai 2000 mdpl, Kartika II dapat beradaptasi sejak 900 mdpl, dan kualitasnya semakin meningkat ketika ditanam lebih tinggi. Lot yang Santi gunakan berasal dari Mbohang, Flores, diproses natural anaerob, dan diroasting light Scandinavian oleh SMC Roastery. Secara teori, profil rasanya mengarah ke strawberry, guava, citric acidity, dan cane sugar sweetness. Namun setelah diseduh, rasa yang paling menonjol justru cane sugar yang kuat, vanilla, dan citric, dengan sentuhan berry yang tipis namun bersih. Today I brewed Kartika II, Indonesia’s native Arabica variety. This variety comes from the Catimor lineage, a cross between Caturra and Hybrido de Timor (HDT). Even though Arabica usually grows best at 1200 to 2000 masl, Kartika II can adapt from 900 masl, and the quality improves when planted higher. The lot I used comes from Mbohang, Flores, processed with natural anaerobic method and roasted in a light Scandinavian profile by SMC Roastery. In theory, the flavor notes include strawberry, guava, citric acidity, and cane sugar sweetness. But after brewing, the strongest notes I found were cane sugar, vanilla, and citric, with only a light touch of berry.
