A little shy🥹 but today we're sharing how we made this cozy Apple Cake 🤭 What you need: For the cake batter * 3 large eggs * 1/2 cup maple syrup / 120 ml * 1/2 cup avocado oil or neutral oil / 120 ml * 1/2 cup plain Greek yogurt / 120 g * 1/4 cup milk / 60 ml * 1 tsp vanilla extract / 5 ml - optional * 11/2 tsp cinnamon * 1/2 tsp salt * 2 tsp baking powder / aprox. 8 g * 1/2 tsp baking soda / aprox. 2-3 g * Start with 1 1/2 cups all-purpose flour / aprox. 190 g, plus more as needed For the apples * 3 medium apples, thinly sliced * 1 tbsp lemon juice * 1 tsp cinnamon * 1 tbsp flour or cornstarch * 1 tbsp maple syrup, optional Optional topping * Chopped walnuts or pecans * A little extra cinnamon * A small drizzle of maple syrup after baking, for shine Preheat the oven to 350°F. Grease an 11-inch round pan and line the bottom with parchment paper, if possible. Thinly slice the apples and place them in a bowl. Add lemon juice, cinnamon, flour or cornstarch, and maple syrup if using. Toss gently and set aside. If the apples release liquid, don't pour that liquid over the cake. In a large bowl, whisk together the eggs, maple syrup, oil, Greek yogurt, milk, and vanilla until smooth. Add the cinnamon, salt, baking powder, and baking soda. Mix again. Start adding the flour gradually. Begin with 1 1/2 Cups of flour, then add a little more only if needed. The batter should be thick but still spreadable - thicker than pancake batter, but not as firm as dough. It should slowly fall from the spoon and be easy to spread in the pan with a spatula. If the batter looks too runny, add 1-2 tablespoons of flour at a time until you reach the right consistency. Try not to add too much flour at once. Spread the batter evenly into the prepared pan. Arrange the apple slices on top in a circular pattern, slightly overlapping them. Don't press the apples too deeply into the batter. Add chopped walnuts or pecans around the edges or lightly in the center, if using. Bake for 40-50 minutes, or until the center is set and a toothpick inserted in the middle comes out clean or with a few dry crumbs.
