Can someone tell me what I did wrong? It was hard as a brick, a knife wouldn’t even go through it. I broke it with my hands and it was gummy on the inside.

You should try mixing everything together, leaving it on your counter overnight for eight hours, shaping it and baking it. No stretch and folds, no crazy timing, still turns out great every time.

Can you do a comparison between an active starter loaf vs. using rehydrated starter (50g dry starter and 50g water)? I only recently dried my starter and haven't even used it to bake yet but excited about having a jar of dry starter that can last indefinitely.

Use active starter for the soft bread you eat as is. Use discard for the bread you use for sandwiches. Taste the same has a little more structure for fillings. Your whatever you have for bread that feeds you. It’s never that serious and always fun to make❤️
