One of our most highly requested recipes is BACK! 🙌 We made John's Slow Cooker Corned Beef again, and it's just as good as the first time! This is one of those meals that requires very little prep but turns out SO good. Tender corned beef, potatoes, and carrots slow-cooked in @kettleandfire beef broth until everything is full of flavor. This time, John actually pre-cooked the corned beef using his sous vide before finishing the meal in the crockpot. But don't worry, you absolutely do NOT need a sous vide to make this recipe! I'm including our original slow cooker method below. John's Slow Cooker Corned Beef & Vegetables Ingredients (4 servings) • 3–4 lb USDA Choice flat-cut corned beef round • 2 cups low-sodium beef broth • Whole carrots, halved • Yukon Gold potatoes, cut into large pieces • 1 seasoning packet (included with corned beef) • 1 tsp whole mustard seed • Baby bok choy or cabbage (optional) Directions 1. Prepare the corned beef: Rinse the corned beef thoroughly under cold water to remove excess brine. 2. Set up the slow cooker: Place the corned beef on a raised rack inside the crockpot. Pour in 2 cups of low-sodium beef broth. 3. Add seasonings: Sprinkle the included seasoning packet and 1 tsp whole mustard seed over the corned beef. 4. Add vegetables: Arrange the Yukon Gold potatoes and halved carrots around the meat. 5. Slow cook: Cover and cook on LOW for 8–10 hours, until the corned beef is extremely tender. 6. Add greens (optional): If using baby bok choy or cabbage, add during the final hour of cooking. 7. Serve: Remove the meat and vegetables from the slow cooker. Slice the corned beef against the grain, or pull it apart if it's tender enough, and serve! A Few Notes: 🥩 The cut matters! We use flat-cut corned beef round instead of traditional brisket. It's a leaner cut and one we really enjoy. 🥕 Keep the vegetables chunky. Larger pieces of potatoes and carrots hold up better during slow cooking. 🧂 Watch the sodium. Corned beef is already cured in a salty brine, so low-sodium beef broth is a good choice. And again, the sous vide was just something John decided to do differently this time. The original crockpot recipe works perfectly well on its own! Follow along for more of our homemade recipes, gluten-free meal ideas, gut health, and everyday wellness. 🤍 #crocktober #crockpotrecipes #fallrecipes #gutfriendlyfoods #gutfriendlyrecipe @Kettle and Fire
