What you need: 14 oz day old crusty bread (French loaf or sourdough), cut into 1” cubes 1.5 cups Country Fresh Original Eggnog 3 large eggs 1/3 cup liquid egg whites 1 tsp cinnamon 1/4 tsp nutmeg (if you like extra nutmeg flavor) ½ cup dried cranberries (optional – could also use fresh) Glaze: ½ cup confectioners sugar + 2 teaspoons orange juice How to Make: Make sure bread is dry. If you have a fresh loaf, cut into cubes then toast at 350ºF for 5 minutes to dry out. Preheat oven to 350ºF and grease a 12-cup muffin pan. In a large bowl add Country Fresh Original Eggnog, eggs and egg whites, cinnamon and nutmeg; whisk together until combined then fold in the cubed bread and cranberries, making sure all of the bread gets coated with the eggnog mixture. Place about ½ cup each of the soaked bread into each muffin cup, pushing pieces in as necessary. Bake for 20-25 minutes, or until tops are golden brown. Once cooled, add glaze with orange zest for a sweet topping, or serve with your favorite toppings, like whipped cream or maple syrup.
