For an open hem you can lay it flat across the V die and hem it with the punch

put a piece of shim steel in it so that it is open, but also, don't use the bottom of the die like that. over time it'll destroy that die. use a flattening die

in England we call that a safety edge and to get a desired gap put a scrap strip of the material in before flattening but leave extra either side to Knock it out after.

For an open hem place a piece of scrap inside across the bend length. Accommodate for the extra material thickness in your program or you’ll blow the springs out in that die. If you want a closed loop hem just hit it softer. If you have multiple operators using that setup be careful that die can get ruined pretty quick
