Beat in eggs one at a time, then mix in vanilla extract until smooth. In a separate bowl, whisk flour, baking soda, salt, and cream of tartar. Gradually mix into wet ingredients until combined. Do not overmix. In a small bowl, mix 1/4 cup sugar with 2 tsp cinnamon. Roll dough into 1.5–2 inch balls and coat in cinnamon sugar. Place cookies 2 inches apart on prepared sheets.
