@helentaylorrr: this was better than the banoffee pie yogurt bowl and i never thought i’d say that… (for 1x portion of date caramel) you'll need: - 3 dates - 1/3 cup any milk (plus more if needed) - pinch of sea salt (for the banana pancakes): - 1 banana - 1/2 cup cottage cheese - 1 egg - 1tbsp honey - 3 heaped tbsp plain flour (or roughly 1/2 cup) - 1tsp baking powder - knob of butter for frying (to serve): - greek yogurt - dark chocolate method: 1. begin by placing the dates in a shallow bowl and pour over some boiling water until they are covered. 2. leave to sit for a couple minutes. 3. remove the pips from the dates and place in a blender. 4. pour in the milk and sprinkle in the sea salt. 5. blend until silky smooth. set to one side. 6. in a medium sized bowl, mash the banana and add in the cottage cheese, egg, honey, flour and baking powder. mix until thoroughly combined. 7. melt the butter in a pan and spoon in roughly 2tbsp of pancake batter for each pancake onto the pan (you should get about 4 pancakes in total!). 8. fry for about 5 minutes on a medium heat and check to see if they are golden. 9. once a lovely golden colour, carefully flip over and cook for another few minutes. 10. repeat with any remaining batter. 11. serve the pancakes in a stack and spoon over the date caramel. 12. place a dollop of greek yogurt on top and don't forget to grate the dark chocolate all over... enjoy banoffee queens xxx🤎 #yogurt #breakfast #banoffee #cottagecheese #pancakes
