Peri Chicken Roast Burrito with Peri Gravy If you’re still in the post Christmas roast ick but want comfort food… make these burritos 👌🏼chopped roast potatoes, juicy peri chicken, peri spiced stuffing, cheese & peppers with a side of peri gravy for dunking ooof.  High protein, easy to make and absolutely bangin 😍 Ingredients (serves 2):  100g frozen roast potatoes (I used Aunt Bessie Duck Fat) 2 x 125g chicken breasts butterflied and flattened  1 tsp smoked paprika  ½ tsp garlic granules  Salt  Black pepper  2 tbsp peri marinade or sauce  1 small red onion sliced  1 small red pepper sliced  25g dry sage & onion stuffing mix 1 tsp peri seasoning (can sub for more peri marinade or sauce) 2 large tortilla wraps
30g reduced fat cheddar grated  Peri gravy: 150ml chicken stock 
1 tsp chicken gravy granules
1 tsp peri marinade/ sauce (more to taste)
1 tsp cornflour mixed with 1 tbsp cold water
 💕Preheat the air fryer to 200°C.  💕Add the frozen roast potatoes and cook for 15 minutes, shaking once. 💕Season the chicken with smoked paprika, garlic granules, salt and pepper, then brush over the peri sauce. 💕Add the chicken, red onion and red pepper to the air fryer and cook for 10–12 minutes, flipping the chicken halfway. 
 💕After 8 minutes, remove the onion and pepper so they don’t overcook, then return the chicken to finish cooking, until cooked through and golden and the potatoes are crisp. 💕Prepare the stuffing with boiling water as usual, then stir through the peri seasoning. 💕To make the gravy, simmer the stock with the gravy granules and peri sauce, then stir in the cornflour mix and cook until thickened. 💕Slice the chicken, roughly chop the potatoes, then wrap everything up with the stuffing, veg and cheese. Toast the burritos if you like and serve with peri gravy on the side for dunking.
