Thats Not true Turkish ice cream isn’t hard because of goat’s milk. The firmness comes from salep (a thickening orchid root powder) and mastic (a natural resin), which make the ice stretchy and dense. Goat’s milk can be used, but it doesn’t cause the hardness — the special ingredients and kneading technique do.
