5 Family Dinners For Under £35, Recipe Number 3✨ Sausage & Chorizo, Orzo Soup 🍲 Ingredients 6 Sausages, skins removed 80 g Chorizo, sliced 10 g Butter 100 g Frozen carrot, celery and onion, mixed veg 1 tsp Garlic salt 1 tsp Onion granules 1 tsp Oregano 1 tsp Thyme 2 tbsp Tomato puree 200 g Orzo 300 ml Passata 1 l Chicken stock 60 ml Double cream 20 g Parmesan 1 handful Spinach Fresh chives, optional garnish Method Bring a pot to medium heat and add the butter. Allow it to melt, then remove the skins from the sausages and add the sausage meat to the pot. Crush the sausage meat down to form a mince and cook for a few minutes until browned. Add the chorizo and frozen vegetables, stir, and cook for a few minutes. Sprinkle in the seasonings and tomato puree, then stir and cook for another minute. Add the orzo and coat it in the mixture. Pour in the passata, stock, and double cream, then mix. Allow to simmer for 10 minutes, until thickened and the orzo is cooked through. Turn off the heat, then stir through the parmesan until melted. Add the spinach and allow it to wilt. Serve with extra Parmesan and a sprinkle of fresh chives. I now have over 500 recipes on my app now!
