Instructions 1. Marinate the Chicken 1. In a bowl, mix the soy sauce, oyster sauce, rice vinegar, lime juice, brown sugar, honey, sesame oil, and salt. 2. Add the chicken and marinate for at least 20 minutes, preferably up to 5 hours. 2. Cook the Chicken 1. Heat rapeseed oil in a frying pan. 2. Place the chicken skin-side down and cook until the skin becomes crispy and caramelised. 3. Flip the chicken and cook the other side until the internal temperature reaches about 67°C (153°F). 4. Remove the chicken from the pan and set aside. 3. Prepare the Broth 1. In the same pan, sauté the ginger, garlic, and spring onions for 1–2 minutes until fragrant. 2. Pour in the chicken stock and let it simmer for a few minutes. 3. Slice the cooked chicken. 4. Add the chicken to the broth and let it simmer for about 10 minutes so the flavours can come together.
