The rich coffee + creamy caramel center is everything The perfect treat for cold weather 🤎 Dry Ingredients • 240 g all-purpose flour (sifted) • 1 tbsp baking powder • ½ tsp salt • 1 tsp cornstarch • 100 g granulated sugar • 70 g light brown sugar • 1½–2 tbsp instant coffee (Nescafé, Café Legal, any strong instant coffee) • Optional: ½ tsp cinnamon Wet Ingredients • ½ cup unsalted butter (melted) • ⅓ cup olive oil • 2 eggs + 1 egg white • 1½ tbsp vanilla extract • ¼ cup hot milk (to dissolve the coffee) • ¼ cup Greek yogurt • 1–2 tbsp extra milk if the batter needs thinning ⸻ ☕ How to Add the Coffee 1. Mix the instant coffee with the ¼ cup hot milk until fully dissolved. 2. Let it cool to warm and add it to the wet ingredients. 👉 This boosts the coffee flavor and prevents the batter from curdling. ⸻ 🧁 Instructions 1. Preheat the oven to 180°C / 350°F. Prepare a jumbo cupcake tray with sturdy liners. 2. In a bowl, whisk together flour, baking powder, salt, cornstarch, and both sugars. 3. In another bowl, combine melted butter with the sugars (if melted, just mix—no need to cream). 4. Add the oil, eggs, vanilla, yogurt, and the milk with dissolved coffee. 5. Make the caramel: Heat the sugar in a small pot over medium heat until melted and amber. Don’t stir with a spoon—just swirl the pot gently. 2. Add butter: Mix quickly until fully incorporated. 3. Add hot cream: Pour slowly (it will bubble). Mix until smooth. 4. Add chocolate: Turn off the heat, add the chopped chocolate, and mix until glossy. 5. Finish: Add salt and vanilla. 6. Let cool 15–20 minutes. It will thicken into the perfect filling.
