Don’t put seasoning. Put salt on it a few hours before you cook it. It’ll extract all the moisture allowing you to get a better sear/crust. Use avocado oil if you don’t have beef tallow. Literally all you need is salt. You can also lightly crush a few garlic cloves and base it with some butter into the steak

For the seasoning not to burn try seasoning and pressing with a paper towel so the meat gets stuck onto seasoning and letting it sit for 3 mins at least
