This is super easy to make and extremely delicious!!  2tbsp ghee, olive oil or butter  1 large yellow onion, chopped 2 Roma tomato, chopped (no seeds)  Bunch of cilantro, chopped  1in piece ginger, minced  3 cloves garlic, minced  3 dried limes  2 bay leaves  Seasoning mix (below)  2tsp cardamom powder 2tsp cinnamon 2tsp ground cumin 2tsp black pepper 2tsp salt 2tsp turmeric  2tsp ground cloves  2tsp paprika  2c basmati rice  3.5-4c chicken stock (4c liquid to 2c rice)  6-8 chicken drumsticks, legs, whatever you’d like.  In a big pot, add the ghee or oil and heat. Add the onion and cook until it has color, then add tomato, cilantro, garlic, ginger, limes and half the seasoning mix. Cook on low with lid on for 8-10 minutes until tomato is fully cooked. Then add the chicken, the other half of seasonings and combine. Add 1 cup of the chicken stock, bring to boil and lower heat to low and cook with lid on for 45 minutes until chicken is done.  Remove only the chicken and place on baking sheet, broil in the oven until crispy. Wash the basmati rice and add it to the pot, along with 2.5 more cups of chicken stock. We want 4 cups of liquid total to 2 cups of rice. Gauge how much you have and add more accordingly. Bring to low boil, lower heat to low and simmer for 20 minutes with the lid on.
