We would take it and marinate it with kombu, soy sauce, and ginger. Vacuum seal it. And then coat with sesame seeds and sear it. That was our vegan tuna tataki at my restaurant. It was amazing.

There’s a restaurant that cures and marinates watermelon and it tastes just like tuna. Their watermelon tuna on crispy rice is so good!
