So what if the starter never rises how would I know peak feeding time? Mines been smelling like acetone for almost a week now, I do about 1:5:5 ratio little more flour than water, it’s in a room temp spot, I feed every 12 hrs. It’s not rising at all & smells like acetone🫠 she’s about 2+ weeks old now first few days she did great and smelled amazing then went downhill☹️

So if we think our starter is too acidic, we take 5 grams of it, add 25g each of water and flour, then throw away the rest of the acidic starter?

I just passed the 3 week mark and my starter still isn’t doubling :( it will rise, maybe to like 1.5x or so, and then it doesn’t really fall all of the way back down? I tried to do a peak-to-peak feeding about a week ago but it didn’t seem to help (and potentially even made it look a little weaker, I’m worried it wasn’t actually peaked). My apartment is cold so I bought a candle warmer to help keep the temperature up

I use 10, 30 of flour and 15 of water. It rises and it’s bubbly but it smells like alcohol and produces sour bread (like Greek yogurt bread) it is like a month old

Halp! If it smells strongly of alcohol while it’s sitting but it goes away when I mix it is it still acidic? Mine is on day 11 and I noticed a strong alcohol smell for a couple of days but it’s finally rising it just smells really strong of alcohol when sitting.

my sourdough starter is almost 3 weeks old. For the past week She has been doubling every day, her webbing and bubbles look good, but her smell is still really strong and smells like alcohol. I almost baked with her yesterday, but when I checked on her, she had already fallen back down, which she had not done before. I decided to wait what should I do?
