Shuwa (شوا) Ingredients: - 2 kg leg of lamb - Shuwa spice rub - 2 cups @canarybasmati - 4 tbsps ghee - aromatics - salt - 1 head of garlic - start by piercing the lamb with a knife and stuff the holes with garlic cloves. - rub it with Shuwa spice rub and let it marinate for at least 4 hours or 24 hours for best results. - wrap it tightly with baking sheets. Place it on a wire rack in a tray. Add 2 cups of water to steam it and keep it juicy. Cover with 2 sheets of tinfoil and place it in the oven at 220c for 30 minutes then 170c for 3 and a half hours. - wash the @canarybasmati then boil it in some aromatics for 10 minutes or till it’s 90% cooked. Strain it and place it back in the pot and let it steam on the lowest heat possible for another 10 minutes. - place a piece of charcoal with a drizzle of ghee alongside the lamb cover and let it smoke for 30 minutes. - serve it with the rice with any sauce of choice and enjoy. #cooking #food #oman #bbq #omanifood #meat #lamb #smoked #spicy #garlic
