Oat Fermentation – using whole oat grain (KVASS just means fermentation, so use the English word, this is a European recipe)
Yield: 2 litres
Ingredients
• 150 g whole oats (oat groats, unrolled, uncut)
• 2 litres water
• 1 tablespoon honey or raw sugar (optional, to support fermentation)
• ¼ teaspoon sea salt
• (Optional) a small piece of rye or sourdough crust
Method
1. Wash the oats thoroughly
Rinse the whole oat grains several times under cold water until the water runs clear.
2. Soak
Cover the oats with fresh water and soak for 8–12 hours, then drain.
3. Combine
Place the soaked oats in a clean glass jar or fermentation vessel.
Add 2 litres of fresh water.
Stir in the honey or sugar and sea salt until dissolved.
Add the bread crust if using.
4. Ferment
Cover loosely.
Leave at room temperature (18–22°C) for 36–72 hours, stirring once daily.
5. Strain
Strain the liquid into bottles or jars.
6. Chill
Refrigerate for 12–24 hours before drinking.
