adding a small splash of vinegar to the boiling water will make them hold their structure much better, so they don't disintegrate when drained. No you can't taste the vinegar, and if you can you added way too much.

I cannot get roast potatoes right at all. they never go crispy, they just start to burn on the edges and the rest stays really pale 😂
